This is a super quick yet tasty soup that doesn’t take much longer than opening a tin but you know what’s in it and the kids love it.
Here we go:
Olive oil
knob of butter
Stick of celery chopped fairly finely
Small onion chopped finely
Two Cloves of garlic squished or chopped
few leaves of basil
400g Tin of tomatoes
Wack a good glug of oil into a saucepan and add the celery and onion and cook slowly until slicked with oil and soft. Add the garlic and basil and stir together until the garlic is soft but not coloured. Empty in the tin of tomatoes and about half a tin of water and the knob of butter. Bring to a boil and simmer until everything has mingled together. Blitz using whatever blender you have. Taste for seasoning (you may need a little sugar if the tomatoes are not sweet). Job done.
You could use fresh tomatoes if you have them or throw a couple in with the above recipes. Just add more water if needed.
